For a real treat try the ribollita, a traditional Tuscan vegetable and bread soup, it's the best I had in Florence.

Reservations are a must and when you make your reservations be sure to request a table with a good view as some are blocked by trees. Try to book so you are there before sunset so you can experience both the view during the day and the city lights at night.
